Mackerel a la Scotty91

Got this recipe off the young'un and have to say it's spot on

Take your fillets of mackerel

Put them in a dish or wrap in foil

Season with salt and pepper (my addition to Scottys originally described recipe)

In a seperate bowl mix together tomato puree and sweet chilli sauce

Liberally apply the sauce/puree mix to the macky fillets

Cook for 20 mins or so until cooked.

Scotty eats them cold the next day - I let them go cold and then mashed them up and spread on toast

...both equally tasty and I'm sure eaten fresh from the oven would work too ;)
 
Tried the recipe today ate them straight from the oven and got to say its a cracker

Go on give it a try you wont be dissapointed

Looks delicious.

I cooked something similar last year, I smothered a load of fillets with encona chiili sauce and some with garlic, took them to the shed and cooked them in my homemade smoker. The idea was I'd have a couple of fillets cold each day with salad for my bait. When they were cooked I thought I'll try one, then another, then another, the whole lot didn't get a chance to cool down.
 
how about mackerel deboned ,mayonaise ,and salad cream just like ya do with tuna all mixed maybe sweetcorn too sounds delicious :D
