  • Cod Lasgane - my version...

    I decided to try my hand at Cod Lasagne and here is my version of it...

    Ingredients:

    Cod
    Fresh Spinach
    Chopped Tomatoes
    Red Pepper
    Onion
    Red Chilli
    Garlic
    Parmesan Cheese
    Milk
    Cornflour
    Olive Oil

    Stage 1:

    Skin, Bone and cut into Cod Fillets chunks (I used a whole fillet from an 11lb Cod for this so that was plenty for me at least )

    In a heavy pan fry off garlic and red chilli in olive oil, after 2 or 3 mins of making sure the oil is infused put a very liberal portion of fresh spinach in the pan to sweat off...after five mins or so this will have reduced into a nice garlic/chilli/spinach pulp. To this add the chunks of Cod and remove from the heat.

    Stage 2:

    To make a tomato sauce I fried off an onion with garlic and added diced red peppers - then to that a tin of chopped tom's. I reduced the sauce down so was less watery and put to one side.

    Stage 3:

    In a pyrex dish I layered half of the Cod/Spinach mix and then covered with half of the tomato sauce then I grated some paremesan on top. On top of this layer I placed lasagne sheets (enough to cover) I then repeated the process to give me two layers.

    Stage 4:

    In a pan I poured in milk and a knob of butter and brought to heat - I then thickened with cornflour (really thick - like wallpaper paste) Into this I stirred a handful of parmesan cheese. This sauce was then layered over the top and topped off with more grated parmesan.

    Slammed in the (preheated to 200 degrees) oven, cooked until golden brown on top, left to rest for a few mins and served - Voila, Lervely Jerbly

        I wonder if Nile Perch would work as well? I've probably got more chance of catching one of those than a, whats it called again, a cod?

            Brilliant. I love lasagne but never thought of making it with fish. If I ever catch a cod big enough to take home I will definitely make this!
