There sweet as a nut deep fried in tempura batter , best way to skin is leave the head on , gut then cut the fins off , cut a line behind the head and get some pliers and peel away the skin until you get enough to get a hold of , then pull off like a sock .
Fillet out the cartilaginous spine and chunk , batter and deep fry .... MmmmmI am a fisherman !
