Season old cod with sweet potato mash (with a twist)
Flour seasoning:
Chilli powder
Chilli Flakes
Turmeric
Salt
Pepper
Dried Parsely
Teaspoon of each above into a pestle and mortar and grind together - add to heaped tablespoon of flour and mix through.
Sweet potato mash (with a twist):
Sweet potatoes - peeled
Dollop of butter
Dollop of Peanut butter
Zest of Lime
Chilli flakes
Frozen peas - defrosted
Take two pan size fillets from the freezer and defrost (must have been caught last season )
Ensuring fillets are dry of excess moisture coat fillets in seasoned flour and shallow fry in hot oil and butter until crispy on both sides
Boil sweet pots until mashably soft - mash then stir in butter, peanut butter, limes zest and chilli flakes. Once all mixed in add the peas and stir through.
Splodge mash on plate, add the crispy fish fillet and serve
