    First off I've decided that Mackerel needs not be faffed about with too much

    So for this recipe I baked it simply with salt, pepper and a drizzle of Olive Oil.

    Prepare the mackerel by removing the belly sliver and the centre line of bones from the fillet - place in a baking dish and season as above.

    The side for this dish was fried sweet potato wedges with honey, olive oil, chilli and garlic with peas

    Peel the sweet pots and cut into wedges

    Blanch the pots for 3-4 mins - drain the water and leave to steam dry for a few mins.

    Add honey, olive oil, chiili flakes and crushed garlic to the pan and shake about until the wedges are liberally coated

    Put the mackerel into a hot oven and cook for as long as required

    While this is being done add the sweet pots and the dressing to a hot frying pan and cook them until crispy - at the last gasp I added frozen peas and fried them off too so

    And Serve once all ready
