Getting a bit fed up with battered cod, well not really, but should maybe look for a healthier recipe

BriH posted canny link for fish pie last time I asked, anyone got any other simple recipes?

    Cheers!

Just wrap it in some foil with some herbs or Garlic and maybe a little wine Keith, some people like to put some Lemon in with it but I find just rubbing the Fish with the Lemon is more than enough.

Try steaming it with some ginger and spring onions and adding a little soy sauce when served, a nice chinese variation, also very healthy.

Edit: I should have said, shred the ginger and spring onions nice and fine. Also nice if you add some finely chopped Garlic.

I never put batter on mine, even if I fry it, just long enough for it to be cooked right through. Usually just less as to too long.

Just google fish recipes and it will come up with loads of others too mate

    Jim.

      Cheers Jim,

Just had some cooked in the oven, I just covered it with milk.

It wasn't bad but would of been better with some herbs etc.

Very little chance of wine being allowed to be used for cooking in our house, you'd have to buy it 5 mins before it was needed.
      Cheers, Keith.

simples as owt, grate all the zest off a lemon, rub it all over the fish, salt and pepper, 10 mins in a hot oven

Don't like fish much myself but used to put a fillet in some milk with a knob of butter and a few minutes in the microwave. Flake the meat of and have it with parsley sauce or salad. My lad used to like it, now I can't catch them haha!

Got to agree with Jim here....You can't beat it in foil with a squeeze of lemon and loads of cracked black pepper.
Never tried the chinese version, but if I manage to catch one of these dodo like creatures in the winter I will definitely try that style.

get 2 12 inch squares of silver foil (if bbqing) or grease proof if oven cooking and put them at 45 degrees on top of each other like a star,
chop up some fennel and put a good layer of them on the foil,
place a good chunk of cod that has been left to firm up over night in the fridge on top, sprinkle with capers,
couple of grinds of black pepper,
                    sprinkling of sea salt flakes,
pick up the corners of the foil/paper to make a packet and add a good slug of dry vermouth,
                    squeeze of lemon
bung in oven or corner of BBQ for 20 mins and bobs yer uncle

Steamed Cod with Fennel Cooked en Papiot.

serve with fresh boiled potatoes and green beans but do not open the packet until you are going to tuck in as the smell released is outstanding.
