        Try Caley Fisheries Tanners' Bank, North Shields used to do Victorinox filleting knives, Taylors Eye Witness do good knives as well i bought one back in the 80's from Irvin's Chandlers it's well worn now but still keeps a good edge

          I'm using a Normark which I paid decent money for, made in Finland so it should be decent! Can't see you going far wrong with a Victorinox either though. You might even get a bottle opener & a corkscrew on it as well!
          Now that would be a good knife!

            had 1 bought for me for my birthday, a martini, wooden handle leather sheath and made in finland, worth a few bob i think and also very sharp
