There are plenty of places to choose from. I know if I was taking the mrs I would have to base the trip around somewhere with shops and fishing in close proximity. She breaks out into a rash and tremors if she is more than a mile from Tesco's for more than 8 hours.
I would suggest Oban as a base and move out from there. Or a bit further south is Lochgilhead which gives you options to fish Loch Fynne or to the west the sound of Jura.
North of Oban is Fort William...with Loch Lynne to go at. Or cross on the Corran ferry (20 quid return)and you have Loch Sunnart to have a go at (used to be famous for spurdogs but the longliners crucified it). Turn left at sunnart and theres Loch Aline with some good shore fishing. Loch Aline old pier gives you an option for an 80 yard chuck putting you into 300 feet of water. Who knows what you will catch but thornies, dogfish & conger should be on your target list. The shore caught skate record is held from this mark too.
The channel where the Mull ferry docks is good for pollack and coalies but it goes through like a train at times. I have also seen cod and conger caught there (the conger from the peir end in broad daylight in about 10 foot of crystal clear water)
The scenery and wildlife around that area is excellent. We always have a boat session on Loch Aline itself (its a bit like fishing a lake) which never fails to turn up thornbacks and I have often thought it would be worth a chuck from the shore.
Hope this helps, all my experience of the west coast is boat based so I cant help too much on individual shore marks. But if I absolutely HAD to take the mrs I would base my holiday in a town and have day trips out and about.
The Mull of Galloway is another closer option and I know many off here have fished it and there is plenty of non fishing things to do.
Cheers
