Freezing fish
Hi Phil
The way I have always kept/stored my fish for a number of years are as followed:-
Caught on day 1 and to be eaten the following day, the fillets are put in the fridge on a dish/tray which will allow the water in the flesh to drain off, fresh fish contains a lot of water.
Caught on day 1 and kept for future use, I vacuum pack them flat and fast freeze them.
When the frozen fish are taken out for use, they have the full day to thaw and rid themselves of water.
I personally wouldn't leave fish in the fridge for any length of time, if I intended to freeze them.
My thoughts hope it helpsJohn S

When it starts smelling of fish it isn't very fresh. I never buy fish from a supermarket for eating.2016 - Cod, Dab, Dogfish, Gurnard, Ling, Mackerel, Saithe, Scorpian fish. .

A trawler goes out for 10 days, say catches on day 2 onwards, then get back to port, fish sold in market, transported to warehouse before being transported again to a local store where it sits on the counter daytime and fridge at night, so I think 3 days in the fridge would be fine!

I never fillet my fish on the same day as caught, gut and head them as soon as possible stops blood leaking into flesh, then in the fridge for 24hrs, fillet them straight from fridge and the flesh is really white and firm, then either eat within another 24hrs or freeze as soon as filleted.
