  • Knife sharpener

    Sick of trying to fillet fish with blunt knifes, purchased 2 knifes in the last 6 months and the crappy sharpeners you get with them just do nothing than chew up the blade.

    Anyone use a good knife sharpener, willing to pay upto £30 for one that will do a good job and last, checked reviews on the net but they are all over the shop so best ask the people that use them on here.

    proper whetstone and a bit of time is bet I reckon, and not leaving them till they struggle to cut butter before trying putting an edge on em

    I use mine in the house a fair bit and always give it a few strokes across a steel before using it and its always pretty keen

    a lot of my trawler mates use Accusharp sharpeners and swear by them but not tried one myself

      victorinox fibrox fillet knife (around £12) from the chandlers up tanners bank towards tynemouth lodge. Coupled with a kitchen devil sharpener from asda (around £6) great combination.

        Yeah £12 from Caleys, that's what John who fillets our fish uses, they are actually boning knives.

        Caleys also do the Accusharp sharpeners.

          used all sorts of sharpenesr and still go back to the whetstone, as already said and as soon as you notice knife going dull a few sweeps across the stone will keep it nice and sharp

            Sharpen them on the oil stone at home in the garage then hone them now and again using a cheap ceramic "steel" on the boat. Once they’re sharp enough to shave the hairs off the back of my arm then they’re done. Gentle and patient, holding the right angle and without much pressure.
            Some knives take and hold an edge better than others; one of the best ones I bought was a £5 filleting knife from Billy’s. It’s better than our best kitchen knives that cost more and don’t get left lying around covered if bits of fish.

              once you'vbe got a good edge on your knife get good quality butchers stee, it l does the job for me as a have been using one for over twenty years

                Aye mt2, the victorinox one from Caley's is the biz, but best sharpened on a diamond stone as the steel is so thin.

                  buy a good steel,my father in law fisherman58 sharpens mine and he swears by them but he recons the smoother the steel the better but if the edge of the blades rough he allways cleans it up on a oil stone first!

                        I bought one of those a few years back at a game fair they are ok but i still prefer the old oil stone.
                        In order to become "old & wise", you must first be young & stupid.
                        Age and experience will beat youth and enthusiasm every time.
                        Youth and Skill is no match for Age and Treachery.

                          Keith made me buy one of the knifes from caleys lol, good choice, quality knife.

                          I've tried all sorts of sharpners but like this one best, have a google/YouTube about them.
